"Homemade" Chicken Noodle Soup

Ok - so it's a simplified version of "homemade". I'm not making my own broth or anything here - let's not get crazy. But it's quick to put together and much better than anything out of a can. My 17 year old daughter asked for this recipe yesterday to make for the family she is currently staying with in her year abroad in France. Here is a picture of what she made (#proudmom). 

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1 clove garlic
  • 1/2 cup chopped celery
  • 4 (14.5 ounce) cans chicken broth
  • 1 (14.5 ounce) can vegetable broth
  • 1/2 - 1 pound chopped cooked chicken breast
  • 1 1/2 cup egg noodles, cooked according to package directions
  • 1 cup sliced carrots
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 tablespoon fresh lemon juice
  • salt and pepper to taste

  • In a large pot over medium heat, melt butter. Cook onion, garlic and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving. Add lemon juice right before serving.
